Louisiana French has become increasingly rare in everyday conversation across South Louisiana. Musicians like Steve Riley & the Mamou Playboys are preparing to bring the dialect to one of its largest audiences at Festival International de Louisiane.

Every time Audrey Allen, the owner of Clambeaugh's, is at Festival, she makes sure her customers get a taste of family, not just her food and flavors. For the 15 th year in a row, she will be in the same spot, near the intersection of Vermilion and Lafayette Street, serving her life-changing crawfish etouffee and many other classic Louisiana dishes.
